I was always facinated by looking at cookies in the cafe shop. But making it my self was a dream until i started experimenting with my new Otg. There was a packet of cornflakes lying in the kitchen since two months as a discarded piece, so i thought why not try out cookies with cornflakes so that it can be used up. To my surprise these cookies were already half gone in a day and i think they won't last for a day or more. So this idea worked out for me and most important was that they were so fulfilling that there was no need for me to prepare breakfast in the morning. In these cookies i have used 50:50 wheat flour and all pourpose flour but one can use either of them or a mix of it in any propotion. Also to make it more tempting i have added chocolate chips in it. This recipe made around 15 medium size cookies and cooking time was around 25- 30 minutes. So lets get started.  


Ingredients used are:-
  1. All pourpose flour/ maida 1 cup
  2. Butter 80 gms
  3. Confectionary Sugar (powdered sugar)1/2 cup
  4. Milk 100 ml
  5. Cornflakes 2 cups
  6. Vanilla essence 2-3 drops
  7. Chocolate chips (optional)
First of all cream the butter and sugar by adding little quantity of sugar each time. One can use a manual whisk if you are not having an electric beater.


Then start adding the flour. Make sure you have sieved it before adding in. Also add vanilla essence in it.


 When all the things are well combined add cornflakes and chocolate chip. If one is looking for a more healthy option then nuts of choice or raisin can be added.


Then using a spatula or a spoon fold in the cornflakes and chocolate chips so that they are well coated with the batter mixture. The final mixture look as in the pic below.


Lastly grease a cookies sheet or a tray and spoon out equal proportion of cookie mixture. Make sure they are not very close to each other as they spread while cooking. In the mean while preheat your oven and bake them at 170 C for 25- 30 minutes or until there surface changes to golden brown.


After they are baked let them cool down completely on a wire rack before storing in an air tight container.


 Finally enjoy your cookies with a glass of milk in the morning or as a snack in the evening with coffee or tea.
