Though growing coffee has a long history that is attributed first to Ethiopia, then Arabia and mostly to Yemen. But if we talk about India it has a very interesting history. I always thought that it was the East India company  that introduced coffee here, but to my surprise it was an Indian saint "Baba Budan" who during his pilgrimage to Mecca in 17th century brought seven coffee beans from Yemen to Mysore. He then planted them on Chandragiri hills and now the hills are named after him as Baba Budan hills. So this was the beginning of coffee industry in India and in particular it was the state of Mysore which is now a part of Karnatka state. This was an achievement of considerable bravery as Arabs had strict control over the export of coffee in any form except roasted and boiled form to prevent its germination. Now coffee plantation is done in southern states of India and have also spread to seven north east Indian states.
The recipe of coffee cake is dedicated to all the vegetarians and also contains low calories. There is no use of dairy product is this recipe so it is a perfect vegan cake.

Lets see the ingredients to make coffee cake:-

Coffee Cake
  1. 175 gm all purpose flour (maida)
  2. 100 gm powdered sugar
  3. 1 tsp baking soda
  4. 1/2 tsp salt
  5. 2 tsp cocoa powder
  6. 150 ml water
  7. 1 tsp lemon juice or vinegar
  8. 1/2 tsp vanilla extract
  9. 25 ml + 2tsp vegetable oil
  10. 1/2 tsp coffee powder 



Looking at the step by step process:-
These are the ingredients which are used in making coffee cake


First of all take all the dry ingredients in a bowl and mix well. Dry ingredients here includes all purpose flour, sugar, cocoa powder, baking soda and salt. Keep it aside


After that in a glass take hot water as per the quantity mentioned and add oil, vanilla extract, lemon juice and coffee powder and mix it .

Then in the next step combine the dry and wet ingredients together, this is done by gradually adding the water mixture and giving a fold to the dry ingredients. The mixture will look as shown in the picture below. 


After this preheat your oven at 180 'c and grease your cake tin with oil . In a microwave, use the convection mode to bake the cake. I have preheated the oven for 10 minutes.


Lastly place the cake tin on a middle rack of your oven and set the temperature to 180 'c for 15-20 minutes.
I have topped my cake with walnuts but that is entirely optional step. 

After 15 minutes are over, just do a toothpick test by inserting a toothpick in the centre. if toothpick comes out clean then your cake is ready. Other wise go ahead with another 5 minutes. As every bodies oven are different and have different power range so some take less time while some a bit more. After the cake is ready cool it on a wire rack.

Enjoy your coffee cake with a cup of hot coffee or cold coffee. I like to top it with chocolate sauce and enjoy it with a scoop of vanilla ice-cream.
