Christmas is just few hours away and everybody must be planning to bake a cake or have already done by now. Usually we can see plum cakes around dominating the shelf of every store but if someone asked me i would like to go for this carrot and orange cake which is not only healthy but also taste awesome. I like the fresh aroma of orange lingering around. It is a tea time cake mainly enjoyed as a snack between meals. But frankly telling if you are a lover of carrot n orange then you won't wait for tea time. I baked it for tea time and thought that it will last at least for a day or two but couldn't find it the next day. Also one thing good about it is, that i have used wheat flour in it, making it healthy all the way.

Lets look at the ingredients used:-
Carrot and orange cake
  1. Butter 80 gm
  2. Castor sugar 115 gm
  3. Wheat flour 100 gm
  4. Baking powder 1 tsp
  5. Baking soda pinch
  6. Grated carrot 1/2 cup
  7. Orange zest 1 orange
  8. Orange pulp 1/2 cup
  9. Egg replacer or 3 eggs

First of all preheat the oven at 180 degree C. In the mean while sieve all the dry ingredients ie wheat flour, baking powder, baking soda and keep aside. Then beat the eggs till they become double in volume but since i was using egg replacer so i followed the instructions written on it and made it fluffy like egg. Also there is pic of egg replacer after beating it.



Then start creaming the butter by adding small quantity of sugar each time and whisking it.


One must beat the butter till it becomes lite and fluffy. One can see below how the colour have changed from yellow to creamish.

When butter is ready add orange zest. Then add half portion of beaten egg or egg replacer mixture and whisk till it gets mixed with butter. Then add small portion of dry ingredients and mix with spatula. Add the remaining eggs or egg replacer mixture and mix well. Then add grated carrot, orange pulp and the remaining dry ingredients and mix them. 


Then pour the the above mixture in a 6 inch tin and bake for 35 - 40 minutes or till the tooth pick comes out clean.
