Kulchas were my favourite when i was a kid. Eating them with chole was a delight at that time. Last weekend when i was buying grocery i saw them staked in a corner. I dint even remember when i had tasted them. So i grabbed them to try out a snack, ie stuffing with paneer and serving along with a cup of tea. Though one can experiment with their own favourite stuffing but i tried out with paneer as it is my favourite.

lets look at the ingredients required for filling:-
Stuffed kulcha

  1. Paneer 150 gm
  2. Onion 1
  3. Tomato 1
  4. Cumin seeds/jeera 1tbsp
  5. Turmeric powder 1/2 tbsp
  6. Red chili powder 1/2 tbsp
  7. Garam masala 1/2 tbsp
  8. Dhania powder 1 tbsp
  9. Salt as per taste
  10. Oil 2 tbsp
  11. Fresh Coriander leafs to garnish

Lets get started with the process:-
First of all take oil in a pan and heat it, add jeera followed by onions and saute them till they turn golden brown. Then add dhania powder, turmeric powder, red chili powder and garam masala. Keep the flame on medium or low to avoid burning of spices.

Then add tomatoes, salt and crumbled paneer mix all the ingredients well to make a paste. Then finally garnish with coriander leafs. One can see in the picture below how does it look in the last step.

Lastly take a tawa, apply butter and shallow fry the kulcha on both sides like a toast. After that apply the filling on one side of the kulcha as shown below. Then cover with another fried kulcha and finally it is done.

The final look is as shown below. I have made some semicircles out of it and quadruples as well. I have applied tomato sauce on one kulcha in order to skip the effort of dipping in kulcha every time. As everybody have their own taste so one can avoid this step altogether. Trust me they tasted so good that my husband was asking for more after finishing all these. So surprise your friends and family with this recipe. Happy eating!
