One of the easiest recipes of paneer which can be cooked in no time is paneer bhurji. When i am in no mood to cook and ask my husband to cook something for a change! then his response would be... ok today i will cook for you. To my surprise which is no more a surprise now, he would always ask is there paneer in the refrigerator? and he would end up making this veggie for me. As far as i remember he must have cooked it more than what i have did. The traditional way of cooking is:- saute the onions and tomatoes with little spices and add the crumbled paneer. But this time i also added capsicum to give it a bit twist and it came out more crunchy. It takes about 5-6 minutes for preparation and also 5-6 minutes for cooking. More over its left over can also be used as stuffing for sandwiches and parathas. So nothing goes waste.

Paneer bhurji
Ingredients one requires for this recipe:-

  1. Paneer
  2. Onion
  3. Tomatoes
  4. Oil to saute
  5. Salt
  6. Cumin seeds
  7. Coriander/Dhania powder
  8. Turmeric powder
  9. Asafoetida powder
  10. Red chili powder
  11. Garam masala powder
  12. Fresh coriander leafs for garnishing

This time i have not mentioned any measurements in the ingredients so don't get surprised! the only idea is to tell that the quantities go as per taste and anyone can increase or decrease the quantity as per his/her liking. So this recipe is very flexible with no hard and fast rules!

Now lets get started with the process:-
Here are the ingredients used for making this veggie. All the vegetables used are finely chopped and paneer is also crumbled.

First of all oil is taken in a kadhai/pan and after it gets hot cumin seeds are added to it.

Then add asafoetida powder, coriender powder and chopped onions.

Saute the onions along with the spices till the onions become golden brown. One can see in the picture below.

After that add chopped capsicum and also saute them for a minute or two.

Then add the remaining spices, ie red chili powder, garam masala and salt.

After this add chopped tomatoes and mix them well with other cooked vegetables.

In the end crumbled paneer is added and well incorporated with the rest of mixture.

One must ensure that paneer should not be cooked for long time as its proteins get denatured and it looses its nutritive value. Just stir in and let the water dry but do not over cook, otherwise it will get hard.

Garnish your paneer bhurji with fresh coriender leafs and serve with hot chapati, parathas or naan.
