Hey you must be wondering that i have gone nuts today. Talking about #rava#uttapam#muffins? you are accustomed to hear banana, blueberry or a chocolate muffins but when i heard it for the first time even i was surprised. Though they are not sweet in taste but i can assure you that it will definitely surprise your guests or even your family members when you serve it for the first time. The best part about this recipe is that, it is so nutritious and quick to make that you will fall in love with it. It is a great idea for your kids tiffin; also you can serve it during breakfast or snack time.
The taste will be the same as your regular rava uttapam as we will be using the same batter as for it. But there is a twist in this recipe that it is baked like a muffin in your oven and while serving it you can top it with crunchy vegetables of your choice and garnish it with some nuts and savouries or namkeen. This recipe is made with all the rich ingredients and no soda is used while baking. So what are you waiting for just go ahead and give it a try.

Rava uttapam muffins

Ingredients used are:-

  1. Rava 1 cup
  2. Curd 4 tbsp
  3. Salt to taste
  4. Water 
  5. Chopped onion, tomato, capsicum(optional)
For topping:-

  1. Mix vegetable fry ; or 2. Any crispy vegetable left over at home.
For final garnish:-

  1. I used roasted nuts and namkeen. You may use any of your favourite namkeen like aloo lacha, panchratan mixture, khata meetha or any thing you like.
Procedure for making rava uttapam muffins:-

First of all take rava in a bowl, add curd, salt and water to make a smooth batter which you normally make for uttapam. Keep it covered for 10 minutes so that rava can absorb water. You may add chopped onion, tomato, green chilli and capsicum at this stage. Meanwhile preheat your oven at 180'C.

Then take your muffin moulds and pour the batter in it till 3/4. I have used silicon muffin cups but if don't have it then you may use the regular one which is available at your home. Then bake them at 180'C for 10-15 minutes or until tooth pick comes out clean.
 When they are baked then spread little ketchup on the top and top with a layer of vegetables and finally garnish with the crispy namkeen.
